Obligatory Chopin post. I really enjoy listening to classical music, piano solos in particular, while doing homework or what not. Some say it helps concentration, but I just enjoy it. It's a shame listening to this genre is somewhat looked down upon. My "Piano Solo, Romance Era" still remains my favorite station on Pandora.
As for modern music, my favorite song would have to be Muse's cover of Mon cœur s'ouvre à ta voix in I Belong To You.

Revolutionary Etude by Chopin (alot of his work is really great... play eternal sonata if you're into RPG's, it's got him as a main character... weird stuff but it works out well.)
Kuja's Theme by Nobuo Uematsu (from Final Fantasy 9, it's really dark but very good... there's a piano version but I prefer the original, which still has piano, it just has more of some other instruments also. Nobuo is a great composer.)
If you wanto to include keyboards/synth then a lot of stuff by Ayreon, Dream Theater, and some of Jordan Rudess's solo work are all very good. _________________

Sweet Home Alabama (as already mentioned), Free Bird (Live), and I Know A Little, among others, by Lynyrd Skynyrd are pretty good.
And if we're including synth/keyboard in here, Jump by Van Halen's synth solo is really good, especially considering Eddie needs to jump from guitar the guitar solo to the synth solo in like half a second. _________________

I like Stairway to Heaven. Sometimes me along with my friend use to play this on piano. I really love this and have some good memories related to this song. Nothing can touch my soul which this song does. _________________

Hmm...getting hard to think of things that aren't already listed, but I've got one. Jordan Rudess of Dream Theater is a fantastic pianist. An Evening with John Petrucci and Jordan Rudess is littered with awesome pieces of piano music, among other various Dream Theater and Liquid Tension Experiment songs. I know Rudess has done some solo albums, but truth be told I've never really looked into them. There's a possibility they may all be massive synth fests, but if you're curious, it may be worth looking at. _________________
