I'm somewhat new to this genre, so I'll start the thread of out with some of the stuff I've heard so far.

Man how could I forget HORSE the Band? Probably the most famous nintendocore band I know of. I have their album Desperate Living and love it. I've been meaning to check out their earlier stuff for like 4 years now, :P.

Silly of me not to mention Horse The Band too, particularly as it was their singer who actually invented the term 'Nintendocore'. But yeah, that list was just the ones from my Myspace friends and iPod :P

And any suggestions for original 8-bit video game soundtracks? And games in particular that are worth a listen to?

Edit: Its also worth mentioning that to somebody not into this type of music, Powerglove could easily be mistaken for a Nintendocore/etc. band.

Their best one (or at least my favorite) would be The Mechanical Hand. Although R. Borlax has some pretty good stuff on it too. A Natural Death is alright.

Ok, the off-topic stuff -- and ensuing argument about mentions of bands not technically in this genre -- have been removed now.

Please, if you find someone posting something here that you feel does not belong, please just report it. There's no reason to jump all over them. In this case, it looked like an honest misunderstanding of what defines the genre mentioned in the OP. If you absolutely must say something, particularly if it is clarification future posters may find helpful, try to say it in a tactful way.

Anamanaguchi and Sabrepulse already mentioned? Cool, saves me some work. Also, for anyone who doesn't know, Anamanaguchi's first album was free as well. You can find it here. Also, Scott Pilgrim's OST is probably one of the best game soundtracks I've heard in a while.

I assume you mean actual game soundtracks, so here are some 8-Bit soundtracks I can think of:
Double Dragon I and II
Journey to Silius
ALL THE NES MEGA MANS
Gremlins 2
DuckTales
Bionic Commando
Contra
Super Mario Bros. 1-3

Also, I'll throw out some recommendations. First is Retro Remix Revue, they're a game cover band that does some great stuff that isn't just metalizing game stuff. (Not that that's bad or anything.)

Second is the Bit.Trip games/soundtracks. They're pretty awesome and catchy.
